Barrel-Aged Wild Beer

Each of Establishment’s barrel-aged wild beers undergoes a long journey. Establishment starts with a “typical beer” and ferments it again in used oak wine barrels. Guided by flavours picked up from the barrels, the brewers then add fruits or blend to balance acidity before a third fermentation. The whole process takes from three months to three years before the beer is bottled. Establishment’s first beers, Hibiscus Brett Saison and Dry Hopped Brett Saison, were completed in January 2019, and more than 30 additional barrels are currently fermenting behind the scenes.
