Zero-proof cocktails have gained popularity in recent years, particularly among those who want to avoid the effects of alcohol but still partake in the social ritual of a drink with friends. A sip of Confluence Distilling’s Raspberry Lemon Gin & Tonic will have you questioning whether what you’re drinking is really alcohol-free. Rather than gin, the flavour here comes from gin bitters made with coriander and Alberta-grown hops. The formula even emulates the mild burn of alcohol. Lead distiller Pheelan Mah debuted the beverage by conducting an experiment amongst a group of friends: Those who tasted it and didn’t know it lacked gin described the drink as being “too stiff.” This drink has since gained popularity throughout Canada (and in some parts of the States) as the drink of choice amongst fans of the zero-proof cocktail.
