This version of a popular pasta sauce usually involves some sort of dairy to produce a rich, smooth flavour. But with Soul Bowl’s goal of creating “nutrient dense comfort food that can be enjoyed on a plant-based, dairy-free, gluten-free diet,” you’ll instead find dairy replaced with cashews. Métis chef and nutritionist Adam Trotchi, owner and operator of the business, says Soul Bowl started out small, with a team chopping, blending and cooking ingredients for each and every jar from start to finish. But don’t let that quaintness fool you into thinking his small business will remain small — while Trotchi may have started the Rosé Sauce selling through Instagram, it can now be found in more than a dozen retail locations including Amaranth, Drug + Bean and select Safeway locations. This rich, vegan-friendly pasta staple includes layers of flavour including tomato, onion, cashews, roasted garlic and, of course, cashews.
